These sturdy savory cakes make a good lunch or side dish. Wheat berries (one of the best sources of bran) such as Bob’s Red Mill can be purchased at specialty food stores and many supermarkets.
Ingredients
1 cup whole wheat flour
1 teaspoon salt
½ teaspoon baking soda
¼ teaspoon cream of tartar
1 cup skim milk
2 eggs
2 tablespoons olive oil (plus extra for skillet)
2 cups cooked soft wheat berries
2 tablespoons chopped parsley
3 scallions, sliced thin
- Mix flour, salt, baking soda, and cream of tartar together in a large bowl.
- In a separate bowl, combine skim milk, eggs, olive oil, and wheat berries. Beat lightly. Pour wet ingredients into dry ingredients. Add parsley and scallions and mix until ingredients are combined.
- Heat nonstick skillet over medium heat. Brush lightly with olive oil. Pour batter by ¼cup measures. Cook until lightly brown on bottom. Flip. Finish cooking on second side. Repeat. Serve with mixed greens.
